BREAD PUDDING OF DUUM

Ingredients

  • Brioche Loaf (uncut)
  • 1 Egg & 1 Yolk
  • 1 1/4 cup Heavy Whipping Cream
  • 3/4 cup Dark Brown Sugar
  • 1/2 Tbsp Vanilla Paste (or extract IDC)
  • Pinch of Salt, Cinammon, & Nutmeg
  • 1/2 cup Unsalted Butter (melted)

Equipment

  • Cutting Board
  • Serrated/Bread Knife
  • Rubber spatula
  • Bread Pan
  • Oven
  • Large Bowl
  • Less Large Bowl

I accidentally learned how to bake, and now I’m passing that Curse to you, the consumer.

Cut your loaf into 1/4in thick slices. You don’t need to get out a ruler, but thin slices will leave you with mush later. Cut those pieces into rough cubes and set aside in a large bowl.

In a less large bowl, whisk together everything in this recipe that isn’t bread or butter (eggs, cream, spices, etc). Its all going to the same place, baby. You just made a custard.

Pour half of your custard over the bread cubes from 5 sentences ago. GENTLY fold  it into the cubes using a rubber spatula. DON’T “mix”, fold. If you work the bread too hard, you’ll end up with soup. That would piss you off. Come in with the last half of custard and let everything sit for 5-10 minutes. While you wait, preheat your oven to 380° F.

Grease a bread pan with a bit of melted butter and begin transferring the goods. Alternate with butter until you’re out of both. Cover with foil and bake for 20 minutes

Bake for an additional 10 minutes uncovered or until the top is golden brown. I let mine rest for 15 minutes afterwards, but do you.

You can put whatever you want into this recipe. I prefer chocolate & peanut butter chips. Just be careful adding any extra liquid with fresh fruits or whatever.

I’m fucking tired, dog. Its rare that people find their calling in life. Rarer still to have the opportunity to follow that calling, but you can still burn yourself out. A dream job is still a job.
