Duum Burgers

Duum Burgers

From the Drive-thru at the End of the World.

Ingredients (makes 2 doubles)

  • 4 Beef patties
  • Lettuce
  • Onion
  • 2 tbsp pepper
  • 1 tbsp salt
  • Tomato
  • Pickle
  • Cheese

Burgers are the cornerstone of American fast food culture. You can’t throw a rock in this joint and not hit some restaurant selling one. Variety and convenience are cool, but so is eating something that doesn’t taste like ass.

The most important step to burger alchemy is making sure your patties are room temperature when you start cooking. If you start cold burgers, you’ll end up with something cooked on the outside and raw inside. You may be into that kind of thing, but it’s weird.

Now that you have your room temp beef, liberally season all four and add two patties at a time to a hot pan (medium-high heat) with about a half inch of oil. Flip until you get a crust on both sides and your desired temperature. Here’s a quick guide for cook time, temperature, and doneness.

  • Rare: 4 minutes, 125°F
  • Medium: 6-7 minutes, 140-145°F
  • Medium well: 8-9 minutes, 150-155°F
  • Well done: 10 minutes, 160°F and up

Once your meat is done, go ahead and throw everything together. The toppings here are just my go-to’s. You can get as weird as you want for this part, just don’t bring it to my house.
